Well, I want to raise the kitchen cabinets quite a bit up the wall. Today, I have the vent hose connected to a duct above the cabinets. The distance now from the cabinets to the duct is about 5cm and from the duct to the ceiling about 10cm. If I now raise the cabinets, I either have to let the duct go through the cabinets, which means a lot of sawing in the cabinets plus losing a lot of space in them, or if I can have a flexible vent hose that is clamped between the ceiling and the cabinets... Is the latter option completely crazy and dangerous from a fire safety perspective? It's about 1m the hose will be lying, so...

Then you have a pipe that is lying on top of the cabinets today and out on the roof further away
A flex hose clamped above the cabinet against the ceiling is not a good solution in terms of safety and it should be possible to clean it properly. The hose will over time become messy inside as it lies down, with lots of fat, it can start to leak and drip fat in the cabinets.
If you can move the pipe through the ceiling it is best,
 
I have a cleaning hatch on the chimney pipe right where it connects to the chimney, approximately 1.5m after the kitchen fan. I was thinking more about the flexible hose lying flush against the cabinet and ceiling.
 
I believe it's my 30mm for combustible and preferably insulated with reinforced Rockwool that is the requirement for new ventilation ducts. Would try to achieve that even on an existing one or at least use it as a guideline.
