Hello,
We are in the process of planning to add an extra room on the upper floor of our soon-to-be 100-year-old house. I have conducted some sampling in the wall to see what it consists of and have found brick in the wall at two angles out from the chimney, about 1-1.5 meters. In the picture, the confirmed brick is marked in red and the suspected brick in yellow (not checked).
Why was it built this way?
My guess is that there might have been a stove in both rooms and the brick served as protection?

Or is there another reason you think?

Your guess should be correct. Similar things can often be seen on older drawings, especially by fireplaces like tiled stoves.
